We had a wonderful experience, taking the one day cooking class. We took it on a Saturday, so it included a stroll to the farmer s market, stopping for coffee along the way, and deciding on the fly what we were going to make for dinner. At the market, we tasted so much food - meats, fruits, olives, nuts, breads, cheeses, along with a glass of Orvietto Classico - that by the time we headed back to the restaurant with our produce we were already full. But we had just begun. Chef Lorenzo kept us hopping, while we prepped and made pesto sauce, various focaccias, gelato, pasta, pies our entire meal. Along the way, Lorenzo filled us in on the history of not just the food we were making but the region, from Etruscan times forward. It s obvious he loves food, people, and history in equal parts.
