I worked there once as hostess for an event, I saw all the preparation behind it, the waiters ready them (in the photo) for a few minutes with the trays in hand for the aperitif, because everything is done in time, the tables set up very carefully the glasses were polished to be perfect, at the dinner break I ate the pasta they cooked for the event too, very good, together with 4 types of excellent desserts also those especially the sacher (no one knows how many I will have eaten in addition to those on the photo) and I do not say it because I worked on it I'm external.
